Ready for a teaser? I know I keep rambling on about how we're doing a cookbook blahdeeblah... but we really ARE, we're just super sloooooooow about it. But here is an example of one of our featured recipes. It's based on the Persian Coocoo which is made with eggs, but we have perfected it with only vegan ingredients and limited the oil content to make it heart-healthy as well. We also flattened them so they can be served like a burger (we're limiting carbs around here so we just ate it like steaks).
Serve it with pickles and tomatoes, or put ketchup on it or do whatever sounds good to you; you can't go wrong with these green goodies.
