I know, I know, I hardly ever post recipes. It’s not that I don’t cook; I just never pay attention to amounts. Ironic, since we are working on a cookbook. Maybe that’s what is taking us so long!
Anyway, I have come up with the yummiest sandwich ever, and I wanted to share the recipe:
Spread the hummus on one of the bread slices and add toppings. Best eaten cut in half since it is rather a mouthful!
Vegan tofu feta, borrowed with love from EdenFoods.com:
Cut tofu into cubes, soak in vinegar overnight. They say two hours, but I wanted mine extra flavorful. Rinse well to remove the extra saltiness (and it will be salty!). EdenFoods has an iPhone app that has an amazing amount of vegan recipes; I am really enjoying it.

This sandwich is great for kids, also -- I just left the sprouts off for my two year old who has trouble chewing them. You could also toast the bread, I suppose, or add olives or whatever tickles your fancy! Enjoy!
