Recipe: Almond Coconut Bunnies

Just in time for Spring, these adorable raw cookies are sure to liven up any lunchbox!

Almond Coconut Bunnies

1/2 cup Almond Butter
2 tbsp Almond Meal
2 tbsp Raisins
1 tbsp Agave Nectar
1/2 cup coconut flakes
enough Almond Slices to make ears
enough Vegan Chocolate Chips (optional, not raw), to make eyes -- you can also use raisins if you choose
enough red hots (not raw) or pink icing (pictured, not raw) to make noses -- you can use bits of cherries or other red fruit instead

Mix almond butter, almond meal, raisins, and agave nectar -- roll into balls and roll through coconut flakes until coated.

To serve -- place almond slices and chocolate chips and red hots in their correct places (try to make it look like a bunny!), place bunnies on lettuce leaves with baby carrots for them to nibble on.
