Recipe: Jenny’s Lentil Soup

I recently held a contest for free Disney on Ice tickets in which I asked for a recipe I could post online.  Here is the winning recipe:


Jenny's Lentil Soup


Begin this soup in the morning - it should simmer all day.
(4-6 servings)
Simmer the following ingredients, covered for 3-4 hours:
3 cups raw lentils (rinsed)
7 cups water or stock
2 tsp. salt

Steam or saute these veggies.  Add to lentils after they've simmered 3-4 hours.  Continue to simmer on low heat:
2 tsp. minced garlic
1 cup chopped onion
1 cup minced celery
1 cup chopped carrots

Add these ingredients to soup about 30 minutes before serving:
lots of black pepper
1 1/2 cups chopped, fresh tomatoes
2 Tbs. dry red wine
2 Tbs. lemon juice
1 1/2 Tbs. molasses or brown sugar
1 Tbs. wine vinegar
Optional:  fine herbs (such as thyme or oregano or basil), spinach

Sprinkle extra vinegar and freshly chopped scallions onto each serving.  Enjoy!
