Recipe: Polka Dot Salad

I have been trying to figure out how to get my first grader to eat more raw foods -- she loves veggies and fruits but there’s always the presentation -- how do I make salads more FUN?  So I came up with this easy-peasy recipe:

Polka Dot Salad

2 mini cucumbers, cut into circles
1 carrot, cut into circles,
2 radishes, cut into circles (you get the idea by now)
6 grape tomatoes, cut into, yes, circles
whatever other veggie you can think of that can be cut into, again, circles
herbs to sprinkle over the whole thing (optional)
favorite dressing

This salad can be eaten with fingers, dipping each piece into the dressing, or with a fork.
